Blueberry Muffins with Granola Topping

Directions

  1. Preheat oven to 400°F (200°C). Grease or line muffin cups with paper liners.

  2. Using half the muffin mix (about 3 cups/450 g loosely packed), make muffins according to package directions. Gently stir 1 cup (250 mL) granola, yogourt and blueberries into batter.

  3. Spoon batter into muffin cups, filling about two-thirds full. Top each muffin with 11/2 tsp (7 mL) granola, 1 tsp (5 mL) honey an a pinch of cinnamon. Bake in centre of oven for 18 to 20 min. or until toothpick inserted in centre comes out clean. Let cool in pan on wire rack for 5 min. Remove muffins from pan to cool completely.
