Braised Red Cabbage with Bacon, Pears and Pecan

Directions

  1. Preheat oven to 350°F (180°C). Heat oil in a large saucepan over medium-high heat. Add bacon and fry until crisp; remove with a slotted spoon and reserve on a paper towel.

  2. Add onion and sauté 3 to 5 min., then add garlic and cabbage. Cook 3 to 5 min., then add vinegar, pear and caraway seeds. Transfer to a 9 x 13-in. (3 L) baking dish and bake for 30 min. or until cabbage is just soft.

  3. Remove from oven and stir in salt and pepper. Top with cooked bacon and pecans, and serve.

Tip

The vinegar in this recipe keeps red cabbage from turning blue when it’s cooked.
