Coconut Popcorn

Directions

  1. Heat 1 tbsp (15 mL) coconut oil in a large saucepan over medium-high heat.

  2. Put a few popcorn kernels into the oil and cover. When kernels pop, add remaining kernels. Cover, remove from heat and let stand 30 sec.

  3. Return pan to heat. When the kernels begin to pop, shake pan every few seconds. Once the popping slows down to about 3 seconds between pops, remove pan from heat and pour popcorn into a large bowl.

  4. Return pan to heat. Add remaining 1 tbsp (15 mL) coconut oil and let melt, 1 min. Pour melted coconut oil onto popcorn; sprinkle coconut and salt over popcorn and mix well to coat.
