Dijon Chicken with Green Beans

Directions

  1. Preheat oven 350°F (180°C). Set chicken in baking dish just large enough to fit the pieces in a single layer. Mix mustard with 3 tbsp (45 mL) lemon juice, tarragon (if using) and honey. Pour over chicken.

  2. Bake approx. 1 hr. or until chicken is cooked through and skin is golden. Remove chicken to platter. Skim fat from mustard sauce left in baking dish, if desired.

  3. Toss steamed green beans with remaining lemon juice and olive oil. Serve with chicken, drizzled with mustard sauce.
