Grilled and baked fruit with vanilla and lime

Directions

  1. Preheat the oven to 400ºF (200ºC). With a sharp knife, split the vanilla bean in half lengthways. Scoop out all the little black seeds and mix them with the caster sugar.

  2. Grill the peaches, nectarines and apricots, cut side down on a hot barbecue for a minute or so to get black charring marks on the fruit. Lay the grilled fruit, cut side up, in an ovenproof baking dish. Add the figs and the empty vanilla bean, then sprinkle everything with the vanilla sugar.

  3. Splash with a little lime juice and the brandy (if using) and bake in the preheated oven for 15–20 minutes until the fruit is softened but still holds its shape.

  4. Scoop the yogourt into a bowl and whisk with the lime zest and a little lime juice, adding a drizzle of honey to sweeten, if you like. Take the fruit out of the oven and sprinkle with the mint leaves.

  5. Serve the dish at the table for everyone to help themselves, with the lime yogourt to dollop on top.
