Grilled Scallops with Mango Curry Glaze

Directions

  1. Preheat barbecue to high. Push a skewer through sides of 2 scallops, repeat for remaining scallops. Season with salt and pepper.

  2. Set scallops onto grill with skewer part over foil. Brush with mango curry sauce and grill until cooked through and lightly charred, 2 to 3 min. per side.

  3. Using tongs transfer skewers to a platter, squeeze lime juice overtop and sprinkle with finely chopped chives.
