Smoked Salmon & Potato with Chive Crème Fraîche
Divide salmon into 16 equal portions and set aside. In a bowl, combine the crème fraîche, potatoes, 1 tbsp (15 mL) chives and salt. Divide the mixture evenly among endive spears and top each with a piece of salmon. Garnish with remaining chives, lemon zest and pepper.
