fresh Supreme Seafood Mix (mix of cubed white fish and salmon fillets, scallops and shrimp)

Directions

  1. Melt butter in large saucepan over medium heat. Add celery and onion. Cook, stirring often, about 4 min., until vegetables soften. Sprinkle in flour and cook 1 min., stirring. Gradually mix in milk and clam juice; dissolving flour into liquids.

  2. Add potatoes and salt. Bring just to a boil over high heat, stirring often. Reduce heat to low and simmer 5 to 7 min., or until potatoes are tender and chowder has thickened. Add seafood mix and continue to simmer, 5 min., or until seafood is just cooked through.

  3. Stir in chives and parsley just before serving. Serve chowder with crackers.
