Thai Curry & Herb Salmon Burgers

boneless, skinless salmon fillets (600 g), cut in 1-in. (2.5-cm) chunks

panko bread crumbs

packed roughly chopped fresh cilantro

Thai green curry paste

Sliced tomato, red onion and lettuce leaves (optional)

Directions

  1. In a food processor, combine salmon, panko, cilantro, dill, curry paste and soy sauce. Pulse until smooth. Shape salmon mixture into four patties. Set aside.

  2. Heat oil in a large non-stick skillet over medium-high heat. Cook patties until golden and cooked through, 2 to 3 min. per side.

  3. Serve patties sandwiched in buns with tomato, red onion and lettuce leaves, if using.

Tip

If you'd prefer to grill the burgers, preheat grill to medium. Place a large sheet of foil, folded in half and well-greased, onto the grill. Grill patties on foil for 2 to 3 min. per side.
