Tips

Soaking the plank in fruit juice, beer or wine instead of water will add a different flavour and aroma to your planking. Also, have a large baking tray filled with 1/4-inch (5 mm) of water close to barbecue. Carefully set plank in water to quickly extinguish any flames. Add plank soaking time (3 to 4 hours) to total time.
