Shrimp & Zucchini in Red Pepper Sauce

Directions

  1. In a large skillet, heat oil over medium heat, add onion and cook until softened, about 7 min. Add zucchini and cook about 5 min. Stir in sauce and cook just until sauce boils. Stir in shrimp and cook until shrimp is opaque, sauce is bubbling and zucchini is tender, about 7 min.

  2. Serve shrimp on top of couscous, rice or pasta and sprinkle with feta and basil.
