Coffee Molasses Tri-Tip

  1. Preheat barbecue to medium-high. In a small saucepan, mix instant coffee with hot water to dissolve. Mix in garlic, barbecue sauce and molasses. Heat over low heat and let simmer for 2 min. then reserve about 2/3 cup (150 mL) of sauce and pour the rest into a shallow baking dish. Return grill to medium-high heat. Place meat into the dish, turning to coat all sides, and then season all sides with salt.

  2. Place meat on grill and cook about 3 min. per side to brown surface. Discard remaining sauce in dish.

  3. Reduce heat to medium-low and cook 25 min. with the lid down until a meat thermometer reads 160°F (71°C) when inserted into thickest part of tri-tip. In the last 5 min. of cooking, brush 2 tbsp (30 mL) of reserved sauce onto meat, turning to coat all sides. Remove meat from grill, rest 10 min. Slice across the grain and serve with remaining sauce.
