Baked Eggs with Prosciutto and Herbs

Directions

  1. Preheat oven to 350 °F (175°C). Line each of 8 greased ramekins with half a slice of prosciutto. Break an egg over the prosciutto and drizzle each egg with 1/2 tsp (2 mL) cream. Top with a portion of the herbs, salt and pepper.

  2. Transfer ramekins to a baking sheet and bake on the middle rack of oven for approx. 15 min or until white is just set and yolk is still runny.

  3. Serve with a dollop of salsa, if desired.
