Red Potato & Pea Curry Wrap
Place potatoes in a pot of cold water, bring to a boil and simmer until fork-tender, about 15 minutes. Drain and set aside.
Heat oil in a skillet over medium-high heat. Add onion and sauté until tender, about 2 minutes. Stir in potatoes, peas and water. Cook, stirring, until heated through, about 5 minutes. Stir in red pepper, dip, lemon juice and chives.
Divide potato mixture evenly between tortillas, wrap and serve.
