Sweet & Spicy Nuts
Preheat oven to 350ºF (180ºC). Whisk egg white in a large bowl until foamy, about 1 min. Whisk in sugar, salt and cayenne pepper. Add nuts and stir to coat.
Scrape nuts onto parchment paper-lined baking sheet in a single layer. Bake in centre of oven for 10 min.; reduce temperature to 275ºF (140ºC) and bake another 15 min. Let nuts cool on tray. Break apart before serving.
