Chocolate Chia Granola

  1. Preheat oven to 325ºF (160ºC). In a large bowl, combine oats, almonds, chia, cherries, cocoa powder, cinnamon and salt.

  2. In a small saucepan, combine honey, 3 tbsp (45 mL) of the oil and vanilla. Cook on low, stirring constantly, until honey has liquefied. Remove from heat. Pour over oat mixture; using spatula, gently fold together until well combined.

  3. Using remaining oil, grease a 12 x 17-in. (30 x 45 cm) rimmed baking sheet. Press granola mixture in even layer onto sheet. Bake for 30 min.

  4. Remove from oven and let cool completely on baking sheet. Using hands, break into pieces. Store in airtight container for up to 2 weeks.


This decadent mix is perfect for substituting in your favourite ingredients: Instead of cherries, use raisins, apricots or cranberries; you can also try flaxseed or poppy seeds in place of chia.
